Tahini Dip - Cyprus BBQ's Meze Collection - #1 Tahini Dip
A wonderfully authentic Tahini dip. Brilliant accompaniment with any of your Souvla and Souvlaki, as well as raw veggies and breads.
Ingredients
- 2 heaped tbsp Tahini paste (We will let you know how to make this too)
- 4 Cloves Garlic
- Juice of 2 Large Lemons (3 Small)
- 4 tbsp Olive Oil.
You can buy Tahini paste at most decent sized Supermarkets. However we prefer to make our own. To do this you will need the following.
- 125g Sesame Seeds
- 75ml Olive Oil
Get a pan pre-heated to a medium to high heat on the hob. Its really important to not BURN the seeds as they will taste appalling. So keep busy and keep those seeds moving. Keep them stirring until they are a lovely golden-brown colour.
Once the sesame seeds are nicely toasted add them to your blender/food processor with most of the Olive oil. Keep blending the Paste and adding olive oil to achieve a single-cream like consistency. Done! Home made Tahini paste. Store it in an air tight container in the fridge and it should keep for a couple of months.
Method
Really simple. Pop all your ingredients into a Blender/Food processor and use a little cold water to achieve the consistency / viscosity of double cream. Store in the fridge in an air-tight container. When ready to serve, you might like to add a drizzle of olive oil or a dusting of paprika!
