Greek ‘village’ Salad

The Greek or Village salad is the ultimate accompaniment to your perfect Cyprus BBQ.
This classic Greek salad is beautifully simple and yet delicious and full of flavour and is traditionally served with just about any meal – well maybe not breakfast!

Prep Time 15 minutes

Ingredients
4 large very ripe tomatoes
1 large cucumber
1 small red onion
A handful of Kalamata olives (with the stones still in)
1 block of Feta (200g or more if you like extra)
4 tablespoons of Greek extra virgin Olive Oil
Salt and Freshly Ground Black Pepper to taste

Preparation
Roughly chop the tomatoes into large irregular shapes
Roughly chop the cucumber into large bite size chunks
Finely slice the red onion
Mix the tomatoes, cucumber and onion in a salad bowl and sprinkle with salt - leave to stand for a few minutes to allow the salt to draw the juices from the salad.
Add the Olive Oil, oregano and Freshly ground Black Pepper and mix well.
Throw in the Olives
Place the Feta on top - if you prefer, break into small chunks and mix throughout the salad

Serving Suggestions
Perfect with your Cyprus rotisserie BBQ or with crusty bread and dips

Tips
Not all fetas are the same try a few and find the one you like best.
If you would like an extra sharpness to your salad dressing add a little vinegar or lemon juice to taste.
Kos lettuce or sliced green peppers may also be added to the salad for a little variety.
